Reading the notes left on our chalkboard feedback board truly warms our hearts, from hikers passing through Fersit, to visitors travelling all the way from Belgium, and even the four-legged pups who stopped for a treat! Meeting you all and hearing your kind words makes every long hour in the kitchen worth it. We wish you all the very best on the next leg of your journey.

Now, straight from the ovens, our shelves have just been fully restocked with three absolute highlights!

🍯 Authentic Polish Honey Cake (Miodownik)

Indulge in a true classic crafted with timeless tradition. Our authentic Polish Miodownik features delicate, golden layers of sweet, aromatic honey cake enriched with ground almonds for an exceptionally soft, melt-in-your-mouth crumb.

Sandwiched between these golden layers is a rich, luscious caramel pudding filling creamily whipped with toffee, silky white chocolate, and velvety mascarpone, infused with real vanilla. Finished with a deeply fragrant, caramelized honey topping, every forkful balances golden warmth, buttery sweetness, and luxurious creaminess.

Great things come to those who wait and two full days of slow, patient fermentation yield a reward beyond measure.

Built upon a living liquid leaven, this authentic crown-shaped Kouglof undergoes a 48-hour slow fermentation to develop a complex, delicate tangy depth and a golden, feather-light crumb. Tucked inside this velvety, butter-enriched brioche are plump sultanas, deeply macerated in cask-aged Scottish Highland whiskey. Each bite bursts with warming smoky oak, honeyed malt, and dark fruit notes, balanced by the sweet crunch of whole roasted almonds lining the traditional fluted moulds. Once baked, each warm loaf is drenched in a rich syrup bath and brushed lavishly with golden clarified butter.

Built on a luxurious foundation of 70% dark couverture chocolate, each bar features a golden toasted blend of rolled oats, chia seeds, and golden linseeds. Wrapped into every bite is a crunchy mix of whole hazelnuts, almonds, pecans, and vibrant pistachios, perfectly balanced by the naturally chewy sweetness of dried apples, golden apricots, raisins, and dates bound together with pure honey and a subtle touch of white chocolate and rich olive oil.
