Today has been our official "experimentation day"—that rare, wonderful slice of free time where we get to play in the kitchen with new tools, new techniques, and exciting new flavour ideas! We’ve had the absolute best time crafting these fresh treats for you, and they are officially sitting in the Honesty Shed, ready to pick up today.
Here is what’s fresh off the bench:
🌰 Hazelnut Praline Croissant Discs We started by roasting hazelnuts and grinding them into a smooth, mouth-melting praline paste with 33% milk chocolate—creating a rich, nutty filling with a delightfully subtle crunch. We rolled this into our delicate croissant détrempe, shaped it into perfect pastry discs, and baked them until golden. To finish, each one is dipped in melted 33% chocolate and generously covered in crunchy Hazelnut Brésilienne.
☕ Artisan Tiramisu Slices A true labour of love built on a light almond and espresso-infused sponge. We layered it with a warm, spiced sultana and Marsala reduction, brushed it generously with fresh espresso syrup, and smothered it in a cloud-like mascarpone and double cream diplomat. Finished with a dusting of rich cocoa powder and delicate tempered dark chocolate sails. Decadent, creamy, and deeply comforting!
🍞 New Stoneground Sourdough Loaves We’ve also been experimenting with exceptional unfortified flours! Today’s bake features rustic loaves crafted from Stoneground Strong 100% Wholemeal Flour and Organic Stoneground Strong White Bread Flour. Slow-fermented for maximum flavour, boasting a crackly crust and a soft, airy, complex crumb.
🌀 Sourdough Cinnamon Roll with Vanilla Glaze
Slow-crafted over 24 hours using rich sourdough brioche dough, packed with warm cinnamon brown sugar, and generously drizzled with pure vanilla glaze.

Even as we post this, we’re back in the kitchen crafting even more new creations and having absolute fun playing with new recipes.
Out the window, we can hear our bees buzzing happily as they harvest the very last of the wild purple heather from the local hills. To top off the magic, one of our young hens has just started giving us all the signs that she's preparing to lay her very first egg! We feel so immensely grateful to live here, surrounded by this beautiful Highland life and doing what we love every day.
